Avocado and Corn Salsa
Celebrate new flavors with avocado and corn salsa on everything from tortilla chips to tacos!
Ingredients:
1 15-oz. can black beans, rinsed and drained
1/2 cup corn kernels, fresh or frozen
4 roma tomatoes, seeded and chopped
1 jalapeno, seeded and minced
1/3 cup chopped fresh cilantro
1 small red onion, diced
1/4 cup lime juice
2 Tbsp red wine vinegar
1 tsp salt
1/2 tsp pepper
2 avocados, diced
Directions:
1. Mix black beans, corn, tomatoes, jalapeno pepper, cilantro, red onion, lime juice, vinegar, salt, and black pepper in a bowl; fold avocado into the mixture.
